World's Best Marshmallow Brownie Recipe

Yield: Makes one large jelly roll pan. These are rich; cut them fairly small.


  • 1 box brownie mix, or 1 recipe of homemade brownies (such as One Bowl Brownies)
  • 4-5 C. (approximately 200 g) miniature marshmallows or homemade marshmallows
  • 1 1/3 C. (300 g) chocolate chips (or semi-sweet chocolate bar)
  • 3 T. butter
  • 1 C. (250 ml) creamy peanut butter
  • 2 C. (20 g) Rice Krispies or equivalent cereal


  1. Mix brownies according to directions. Spread batter in a greased jelly roll pan (11X17-inch/28X43 cm). Bake at 350° F (180° C) for 15-18 minutes. Do not over-bake!
  2. Remove from oven and sprinkle marshmallows evenly over brownies; return pan to oven for 2-3 minutes. Remove from oven and cool.
  3. In a small saucepan, melt chocolate and butter over very low heat, stirring frequently. Add the peanut butter and stir until smooth. Remove from heat; stir in cereal. Spread over marshmallows. Cool completely before cutting--if you can stand the wait!
